Emmental is one of those famous Swiss cheeses with holes in them. Those holes come from bubbles of carbon dioxide created as yeast bacteria consume lactic acid in the curds as the cheese ages. This cheese is mild, a bit sweet, and phenomenal at melting. It’s perfect for your next grilled cheese sandwich or a fun fondue.
